Today I stumbled on this awesome recipe from The Burlap Bag and couldn’t believe my eyes. I have hit a health AND baking spree this month. Keep reading to learn how to make yummy, healthy and EASY-to-make sweets!
What you need:
1/2 cup instant oats
Optional ingredients/toppings: apples, cinnamon, Nutella, nuts, chocolate chips, etc!
Combine banana and oats in a bowl and mash until the ingredients form a paste-like texture.
(I added a little bit of honey to add a little more sweetness)
For my first batch I wanted to make two kinds to see which one I would like better. I made apple cinnamon and Nutella cookies.
Apple cinnamon- cut up 1/4 of an apple mixed into half of the batch, then laid out the cookies and sprinkled some cinnamon on top.
Nutella- cooked the other half of the batch and then topped it with Nutella after they came out of the oven.
Bake for 15 minutes and VOILA! Let me know what ingredients you use in these cookies! Hopefully you love these as much as I do!

This weekend nine of us road-tripped up to Gainesville for a Labor Day get away. The past few days have been filled with beautiful and unforgettable moments. This weekend has remined me not only that I have a short time before I graduate, but I must make the most of every situation, conversation and interaction I have with people here. Here are just a few pictures (more to come) of the great weekend I had!
After church, despite all the hustle and bustle of preparing for my trip to Uganda, I decided to relax at a coffee shop in town and just read to calm my mind just for an hour or so. I seem to be filled with excitement and fear. Now since this mornings sermon had a lot to do with fear I feel as if I shouldn’t be fearful of this trip. I know God is in control of every aspect of my travels. But without the fear I am having I would be going into this trip as if I were making it happen, which is not so. There is a fear of the unknown, but God will calm that fear. My fear is not keeping me from going. I will over my fear of whatever is ahead of me. God has been faithful throughout the preparation, nothing will stop him now. I am so lucky to serve a God that will prove faithful and allow me to overcome my fears and grow in him, as his child.
Wednesday will be here before I know it. I can’t wait to see what God has in store for my team and the people we come in contact with. I know I will be changed and matured during this trip. Only God knows what is ahead, and there is beauty in that.

This weeks pick of the week is in honor of how many avocados I have downed in the last 7 days… which is more than I will say on my blog. I love avocados. A LOT. I have been trying new recipies with avocados in them and I am falling in love with this food. PLUS, it is healthy. WIN WIN WIN!
While I have been trying to take advantage of having TIME to cook… I have not made anything elaborate in a few weeks, but tonight I did! I made what was supposed to be tomato basil pizza but turn out more like flatbread… which is a-okay with me. It was very yummy! I used the fresh basil my mom sent home with me that she has been growing in our organic garden (sounds swanky, I KNOW!) The pictures definitely do not do it justice!!!
