i wanted to let the blog world know:
i am going to Coffee Fest this weekend in NY.
i finished my first week of insanity and i feel great.
i bought tickets to texas, and while i am there i am scoping out competition for my coffee shop.
i love my job(s) and am possibly getting a temporary third job.
the Lord is surprising me each day.
i may be broke but i am so happy. money is nothing.
and although where i am living is not ideal and may not be my favorite place, i love the people that surround me every day and i am so lucky to be where i am.
embrace where you are. it’s where you are supposed to be.

Today I stumbled on this awesome recipe from The Burlap Bag and couldn’t believe my eyes. I have hit a health AND baking spree this month. Keep reading to learn how to make yummy, healthy and EASY-to-make sweets!
What you need:
1/2 cup instant oats
Optional ingredients/toppings: apples, cinnamon, Nutella, nuts, chocolate chips, etc!
Combine banana and oats in a bowl and mash until the ingredients form a paste-like texture.
(I added a little bit of honey to add a little more sweetness)
For my first batch I wanted to make two kinds to see which one I would like better. I made apple cinnamon and Nutella cookies.
Apple cinnamon- cut up 1/4 of an apple mixed into half of the batch, then laid out the cookies and sprinkled some cinnamon on top.
Nutella- cooked the other half of the batch and then topped it with Nutella after they came out of the oven.
Bake for 15 minutes and VOILA! Let me know what ingredients you use in these cookies! Hopefully you love these as much as I do!
I have decided February will be a month of no excess spending. By this, I mean buying NOTHING “new”. Only limited thrifting, buying groceries and paying my bills. I have never gone more than a week or so without seeing something I “couldn’t live without” and justifying the on-a-whim purchase, even if it is a couple of dollars. This means nothing that is not needed, no wants, at all. I have plenty of clothes, accessories and so on to last me for longer than I could imagine.
I am blessed to have the things I need, so why do I continue to buy the things I want when there are far more important things ahead of me. I must focus on the future, close my wallet and move ahead to something greater than those $7 boots at Target. Expect posts of my frustrations and successes.
My mind will be focused on the future.
My body will be content with what covers it.
My soul will be satisfied in the Creator.
